SHAHI TUKDA

Hello and Assalaam Alaikum Lovely People!!!

Today I am going to share the recipe of one of my all time favorite desserts. It is a simple yet delicious recipe and is very popular during Ramadan. It is the Shahi Tukda, the ingredients used in this recipe are simple, which are easily available at your house.

Let's move on to the Recipe.

Prep Time: 15 Mins
Cooking Time: 15 Mins
Serves: 3-4 individuals

Ingredients:
Bread- 5-6 slices
Milk- 1/2 litre
Water- 5-6 Tbsp (to mix with milk powder)
Milk Powder- 4 Tbsp
Cardamom (Elaichi) - 4-5 pods (crushed)
Sugar- 3 Tbsp
Cashews- 7-8 Pcs (finely chopped)
Dates- 4-5 Pcs (finely chopped) (Optional)
Refined Oil for Frying

Method:
1. Firstly, we will take a small bowl, add the milk powder to it and mix it with a little bit of milk or water. Add this mixture to 1/2 litre of milk.Adding milk powder is optional however adding it helps in thickening the milk a bit earlier.

2. Heat the milk at a very low flame stirring it at short intervals(so that it doesn't boil and spill out). In the meanwhile add the crushed cardamom, dry fruits like cashews, dates, or almonds, pistachio etc, you can add any of the dry fruits of your choice and continue cooking it on a low flame. After few minutes add the sugar to the milk.
Make sure you heat the milk for good 15 mins till it thickens up a little. Turn off the flame and let the milk cool down to normal temperature.

4. Take a kadhai with refined oil, now we will deep fry the breads till they turn light brown and crispy from both the sides. Please keep in mind that the oil should not be very hot as it might burn the bread. You have to fry the bread on medium flame and each of the bread pieces is hardly going to take 2 mins.

5. Now after frying, immediately dip the bread pieces one by one in the milk that you have kept aside. Dip it properly, take it out and keep it in the serving bowl. You do not have to leave the bread for a longer duration as this will soften bread too much. Just a quick dip is enough.

6. Once all the breads are fried and dipped in the milk. Pour the remaining milk over the bread and garnish it with dry fruits. Refrigerate for 1 hr. This helps in cooling the bread and making the milk thick like malai (cream).
