HUMMUS RECIPE- QUICK, EASY AND HEALTHY

Today I am going to share a simple recipe which is quite close to my heart as it reminds me of my childhood in Riyadh (Saudi Arabia).
The recipe today I am sharing with you is called Hummus (pronounced as Hommos by the locals in Arab) and is quite well known almost everywhere. It's simple and lip-smacking, quite healthy, requires little to no preparation and could be modified to suit your taste.
Let us begin with the recipe.
Prep Time: 5-6 hrs (Soaking the Chickpeas)
Cooking Time: 15 Mins
Serves: 3-4 individuals
Ingredients:

Chickpeas - 150 gm (soaked overnight)
Tahini Sauce- 4 tbsp or Sesame seeds- 4 tbsp (dry roasted)
Lemon- 2-3
Garlic Cloves- 5-6
Cumin Powder- 1 Tsp
Salt- To Taste
Aquafaba- Water of the boiled chick peas
Olive oil- 5-7 Tbsp
Red Chilly Powder- A pinch (For Garnishing)
Method:
1. Take a pressure cooker and add the overnight soaked chickpeas along with a pinch of salt and cook it for upto 3-4 whistles. Make sure your chickpeas are soft and well cooked, because that will help it in grinding better.
2. Once the chickpeas are done, drain the water from the chickpeas and keep it aside, this water is also known as Aquafaba which we are going to use later in grinding the chickpeas. Let the chickpeas cool down for some time.
3. In the meanwhile, we will take the sesame seeds and will quickly dry roast the same and keep it aside. You must have heard about the tahini sauce, which is nothing but a sauce made up from dry roasted sesame seeds and oilve oil grinded together into a thick paste. You can make the same at your home or you can get the tahini sauce available in the market.
4. Now take a large blender jar and add the boiled chickpeas, dry roasted sesame seeds, lemon juice, garlic cloves, cumin powder, salt to taste and a little bit of aquafaba and about 1 tsp of oilve oil. Grind them all into a thick paste, however the trick of getting the right consistency is that you keep adding little bit of aquafaba and olive oil at short intervals rather than adding it all together.
This is a mistake that a lot of people do while making the hummus and this makes it very thick and not of the right consistency. Adding the aquafaba and olive oil little by little makes the hummus more light and fluffy in consistency.
5. To garnish, use a pinch of red chilli powder and cumin powder. Also add some olive oil in the end to give it that perfect taste.
Your hummus is ready to be served. You can have it with pita bread, falalfel, or just like that. You can store it in the refrigerator for upto 2 weeks.
